No bake halva cake

You'll need some patience when preparing this cake, but it's worth it. The cake is not too sweet, but very satisfying - rich chocolate mousse and smooth, characteristic halva layer are a match made in heaven. Perfect idea for all the halva lovers out there!

Ingredients
Base
  • 40 g unsalted butter
  • 120 g digestive cookies

Halva layer

  • 350 g mascarpone cheese
  • 140 g halva
  • 2 leaves gelatine

Chocolate mousse

  • 100 g dark chocolate
  • 170 ml whipping cream
  • 1 tbsp (15 g) icing sugar

Method

  1. Prepare the base. Crush the digestives in a blender or using a rolling pin and a plastic bag. Add melted butter and mix it until you reach the texture of wet sand.
  2. Line the base of a baking tin with baking paper. Put the mixture into the baking tin and spread it evenly. Press the mixture using a glass. Put the base into the fridge while you prepare the halva layer.
  3. Place 2 leaves of gelatin into a bowl and cover it with cold water; set aside for a few minutes.
  4. Using a fork, crush the halva into small pieces.
  5. Put the mascarpone cheese into a separate bowl and break it up with a mixer at a medium speed until it becomes light and fluffy. Add the halva and continue mixing until combined.
  6. Take the gelatin out of water and press it to get rid of excess water. Melt it in a water bath; be careful not to boil it so it wouldn't lose the gelling properties. Set aside for a bit so it cools down slightly.
  7. Add a few tablespoons of the halva mixture to gelatin and mix it well. Return the gelatin and halva mixture into the bowl with the rest of the halva and mix it thoroughly. Pour the mixture on top of the digestive base and put it into the fridge to set. 
  8. Prepare the chocolate mousse. Melt chocolate in a water bath and set aside for a few minutes to cool. Whip cold cream with a mixer until you achieve stiff peaks; add icing sugar towards the end. Add melted chocolate into the cream and mix until combined. Put the mousse on top of the halva layer.
  9. Decorate the cake, for example with chocolate sprinkles. Put it in the fridge for at least 3 hours, or overnight.
