Pancakes from the oven

Today I'm showing an idea for all the pancake lovers - especially the ones that don't like to spend their mornings next to a heated pan.

We'll prepare oven baked pancakes decorated with fruit of choice - blueberries in my case . These pancakes go well with icing sugar, cream, jam or chocolate - you have just as many options as with traditional pancakes.

Ingredients

  • 600 ml milk
  • 3 glasses (380 g) flour
  • 2 glasses (250 g) blueberries
  • 2 eggs
  • 6 tbsp (60 g) unsalted butter
  • 2 tbsp (30 g) sugar
  • 2 tsp baking powder
  • 0.4 tsp salt
  • Icing sugar for decoration

Method

  1. Add flour, sugar, baking powder and salt into a bowl. Mix roughly.
  2. Add milk, melted butter and eggs. Mix it well using a mixer or a spoon to get rid of lumps.
  3. Pour the batter into a large pan lined with baking paper. I'm using a rectangular pan that's 40 x 25 cm.
  4. Spread fruit on top.
  5. Bake in the over preheated to 220oC (200oC fan) for 15-20 minutes.
  6. Posyp owocami.
  7. Spread icing sugar on top. Cut into slices. Serve on its own or with favourite toppings.
  8. Enjoy!
