Plum streusel cake

Enjoy this recipe for a plum cake with almond streusel!

 


The cake is light and fluffy and extremely easy to make. Almonds are added both to the batter and the streusel, and elevate the flavour to the whole new level. They add a nice crunch, too, while plums are ever so slightly sour - true feast for the senses.

Ingredients

Cake
  • 400 g plums
  • 175 g unsalted butter at room temperature
  • 175 g sugar
  • 175 g flour
  • 3 eggs
  • 50 g almonds
  • 1 tsp baking powder
  • 0.5 tsp vanilla essence

Streusel

  • 25 g butter
  • 25 g sugar
  • 25 g flour
  • 40 g almonds

Method

  1. Start with the streusel. Into a bowl add butter, sugar and flour. Knead it together for a short while until just incorporated and mix in the almonds.
  2.  In a separate bowl combine butter and sugar with a handheld mixer; mix it at high speed until light and fluffy. Add eggs one by one, mixing until fully incorporated.
  3. Decrease the speed of the mixer to low and add flour, baking powder and vanilla essence. 
  4. Grind the almonds and add them to the batter. Mix for the final time so they are well spread in the batter. 
  5. Cut plums into halves.
  6. Grease a baking tin and line it with baking paper. I'm using a circular tin 20cm in diameter. Pour in the batter, cover with a layer of plums and spread streusel on top of the fruit.  
  7. Bake at 180oC for 60-70 minutes, until a skewer inserted into the middle of the cake comes out clean. If the top bakes too fast, cover the cake with aluminum foil or switch from traditional cooking to bottom cooking.
  8. Take the cake out of the oven and leave it in the tin to cool for at least 15 minutes.
  9. Enjoy!
