Enjoy this recipe for a Polish yeast cake with fruit!
The cake is fluffy and only needs minimal amount of work. I got the recipe from my mother-in-law (thanks, Mum!). I used peaches, but strawberries, raspberries or plums will work just as well. The cake is decorated with streusel and icing made out of lime juice; everything together forms an amazing flavour combination.
Ingredients
Cake
- 2 glasses (260 g) plain flour
- 7 g instant yeast
- 50 g unsalted butter
- 40 g sugar
- 2 eggs
- 100 ml milk
- Peel of one lemon
- 200 g peaches
Streusel
- 50 g plain flour
- 25 g unsalted butter
- 25 g sugar
Icing
- 2 tbsp lime juice
- 50 g icing sugar
Method
- Melt the butter in milk. Only heat it up for long enough to melt the fat. Set aside to cool to body temperature.
- Add sugar to eggs and mix until sugar dissolves.
- SIft the flour into a bowl. Add yeast and eggs mixed with sugar. Start mixing with a mixer fitted with a kneading attachment.
- Add milk and butter in batches; wait until the liquid is fully incorporated into the dough before adding the next portion.
- Add grated lemon peel and knead with a mixer for about 5 minutes. Cover the dough and set it aside for 2 hours until the dough doubles in volume.
- Meanwhile, prepare the fruit. Remove the stones from the peaches and cut them into eights or quarters, depending on their size.
- Prepare the streusel. Add flour and sugar into a bowl. Add cold, cubed butter and mix it into the dry ingredients until the mixture feels like wet sand to the touch.
- Grease a baking tin and dust it with flour. I'm using a circular tin 20 cm in diameter.
- Put the dough in the tin and spread it out. Place sliced fruit on top and cover it with streusel. Set aside for 25 minutes.
- Bake in an oven preheated to 180oC, on a middle shelf, for 25-30 minutes. Take the cake out of the oven and leave it to cool.
- Combine icing suger with lime juice. If it is too thick, add a few drops of water. Decorate the cake with icing.
