Chocolate mousse - no eggs, no cream

Light, satisfying, fluffy and chocolate-y dessert!

It's a great recipe not only for vegans, but also for all the people craving for a richly chocolatey and safe dessert. We'll use water left after soaking chickpeas - aquafaba.

Ingredients

  • 150 g aquafaba – liquid from one tin of chickpeas
  • Chocolate bar (100 g)
  • 2 tbsp sugar (30 g)
  • Pinch of salt
  • 3 tsp rum (15 ml)
  • 1 tsp coconut oil
  • 1 tsp vanilla extract

Method

  1. Put the aquafaba into the fridge for at least 1 hour.
  2. Place the chocolate bar and the coconut oil into a heatproof bowl. Melt them in a water bath by placing the bowl on top of a pan with boiling water.
  3. Once the chocolate is melted, turn the heat off under the pan. Add salt, rum and vanilla extract to the chocolate. Mix everything in and set aside to cool.
  4. Beat the cold aquafaba with a mixer at high speed setting for 15 minutes. Start adding sugar about 2 minutes in.
  5. Mix the foam with the chocolate. Start by using 1/3 of the foam to loosen up the chocolate. Fold the rest in carefully, trying not to let the air escape.
  6. Divide into 4 servings and cool it i the fridge for a few hours or overnight.
  7. Decorate with chocolate shavings and fruit before serving.
  8. Enjoy!
