Meringue roulade

Enjoy this recipe for a meringue roulade served with fruit.

 

It's a dessert that not only looks well; it tastes delicious, too. Meringue is light, while its sweetness is balanced by the sour limes and fresh raspberries. It's a great idea for a celebration in a small group of people.

Ingredients

  • 4 egg whites
  • 1.25 cup (250 g) caster sugar
  • 1 tsp vinegar
  • 1 tsp cornflour or potato starch
  • 300 ml whipping cream
  • Zest of 1 lime
  • 2 cups (200 g) fresh raspberries
  • 1-2 nectarines

Method

  1. Pour cool egg whites into a clean, dry bowl. Beat them with a mixer at high speed until fluffy and almost still. Then add sugar in small batches, continuing to mix. Wait until all of the sugar is incorporated before adding the next part.
  2. In a separate bowl mix vinegar and starch together. Add them to the egg whites and continue mixing for 20 seconds, until fully incorporated.
  3. Pour the batter into a rectangular tin lined with baking paper. I used a tin that is 33cm x 23 cm. Bake for 10 minutes in a conventional oven preheated 190 deg C; then turn the temperature down to 160 deg C and continue baking for 5 more minutes.
  4. Take the meringue out of the oven and set aside for 5 minutes to cool slightly. Then, take the meringue out of the tin; turn it out onto a clean kitchen towel covered with baking paper. Set aside for 2 hours so that it cools down completely.
  5. Pour cold cream into a bowl and beat it with a mixer at high spead until stiff. Fold in lime zest delicately, with a silicone spatula.
  6. Spread the whipped cream onto a cool meringue evenly. Cover the cream with a layer of raspberries and sliced nectarines.
  7. Place the meringue so that the shorter edge is facing your way. Roll it rather tightly, using the kitchen towel.
  8. Once sliced, decorate the roulade with extra fruit and lime zest.
  9. Enjoy!
