Today I'd like to share a recipe for one of Polish cuisine's classics - lazy dumplings with fried breadcrumbs.
They are very easy to make, and they are surprisingly nutritious thanks to curd cheese. Their main advantage though is that they are just so comforting and delicious!

Ingredients
Dumplings
- 3 tbsp (40 g) unsalted butter
- 1 cup (130 g) wheat flour + ~50 g for kneading
- 2 packs (500 g) of Polish curd cheese - don't use quark for that, it's too delicate
- 3 eggs
- Pinch of salt
Breadcrumbs
- 3 tbsp (40 g) unsalted butter
- 2 tbsp (30 g) breadcrumbs
- 2 tbsp (30 g) brown sugar
- 1 tsp cinnamon
Method
- Start from grinding your curd cheese. It is worth doing it yourself!
- When the cheese is ground, add 3 egg yolks and butter softened at room temperature. Mix the ingredients until fully combined.
- Into the cheese mixture add sifted flour and salt and mix thoroughly. You'll get a very thick cheese dough that needs to be loosened up.
- We'll use egg whites for that. Beat them with a mixer until stiff peaks.
- Add the egg whites in a few batches into the cheese dough, mixing after each batch.
- Dust your work surface with flour, place a batch of dough onto it and lightly flour the dough, too. Form a long log and divide it up into dumplings. Place ready dumplings onto a floured plate.
- Cook the dumplings with a bit of salt. Put them into a pan with boiling water, wait for them to float to the surface and cook them for further two minutes from this point. Cook the dumplings in batches so the pan doesn't get overcrowded.
- Prepare the topping. Melt butter in a pan; add brown sugar and mix thoroughly. Once sugar dissolved, add breadcrumbs and continue frying for further 2 minutes, until golden. Add a bit of cinnamon.
- Add the dumplings into the pan and fry them for a minute, stirring constantly, to coat them fully with the breadcrumbs and butter. They'll get nice an aromatic crust on the outside and remain soft on the inside.
