Today I'd like to share a recipe for a grilled honey mustard pork shoulder.
Grilled pork shoulder is soft; marinade balances the sharpness of mustard with the sweetness of honey; and everything is underlined with a smoke aroma. There is a fair bit of fat here, sure, so it's not really a choice for people preferring lean meats - but oh, the flavour!

Ingredients
- 1.1 kg trimmed pork shoulder (~1.5 kg before removing the skin)
- 120 g olive oil
- 100 g honey
- 100 g Dijon mustard
- 4 tsp lemon juice
- 2 garlic cloves
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dry rosemary
- 1 tsp dry thyme
Method
- Rinse the pork shoulder and pat it dry; cut off the skin. Cut the meat into 1 cm slices.
- Into a bowl add olive oil, honey, Dijon mustard and lemon juice. Press garlic into the mix and season with salt, pepper, paprika, rosemary and thyme. Stir thoroughly to obtain a smooth paste.
- Add meat into the marinade. Make sure that it is fully submerged in the liquid. Cover the bowl tightly with plastic wrap and put into a fridge for 6 hours, or ideally overnight.
- Grill the meat for 7-10 minutes on each side. It's ready when juices flowing out of the meat are clear. Serve with your favourite sides.
