Intense lemon curd desserts

 Today I'd like to share a recipe for lemon-curd based desserts.

 

Despite the subtle look, the desserts are very intense in flavour. The main star of the show is, of course, lemon, balanced by just the right amount of sweet - especially the lemon mousse is light and sweet. An ideal dessert for all citrus lovers!

Ingredients

Lemon curd

  • 4 egg yolks (~65 g)
  • 130 g sugar (between 1/2 and 3/4 cup)
  • Zest of 1 lemon
  • Juice of 2 lemons
  • Pinch of salt
  • 80 g butter

Plus

  • 150 ml whipping cream
  •  5 biscuits, eg. oat (~80 g)

Method

  1. Prepare lemon curd. Into a heatproof bowl add 4 egg yolks, 130 g caster sugar, pinch of salt, zest of one lemon and freshly squeezed juice of two lemons. Mix the ingredients with a silicone whisk until sugar dissolves. It's important not to use metal utensils at this stage to avoid unwanted chemical reactions and metallic undertaste in lemon curd.
  2. Once the ingredients combine place the bowl on top of a pan with a small amount of boiling water. Heat them up in a double boiler, stirring constantly, until thick custard forms. It should take about 10 minutes.
  3. When custard thickens up take the bowl off heat. Add in 80 g of cubed butter in two or three batches and mix until fully combined. Set lemon curd aside to cool completely.
  4. Prepare lemon mousse. Into a bowl por 150 ml cold whipping cream. Beat it with a mixer at high speed until stiff peaks.
  5. Add 1/4 of cool lemon curd to stiff cream. Combine them gently with a silicone spatula to get fluffy mousse. Put it into a fridge for 30 minutes.
  6. Put a few favourite biscuits into a string bag and crush them with a rolling pin. Transfer crumbs into a bowl for convenience.
  7. Assemble the desserts. Put a heaped tbsp of crumbs into each glass. Place cold lemon curd on top of crumbs and cover it with lemon mousse.  Divide the curd and the mousse equally between all servings.
  8. Decorate to taste - I used homemade mini-meringues, some biscuit crumbs and fresh mint. Serve cold; if you're also using meringues, place them on top of the desserts just before serving.
