No churn berry ice cream

 Hot weather doesn't let up, so today I'd like to share another idea for homemade ice cream.

 

We'll prepare no churn ice cream once again, and this time we'll add a bit of Limoncello for even more creamy texture. The main star of the show is berry sauce, underlined with refreshing aroma of lemon liqueur. Ice cream is smooth and creamy, with no ice crystals; but as this is homemade ice cream without any enhancers, remember to take them out of freezer 30 minutes before serving.

Ingredients

Berry sauce

  • 400 g fruit, eg. strawberries, raspberries, forest fruit
  • 3 tbsp (50 g) sugar
  • 50 ml water
  • 1 tsp lemon juice

Ice cream

  • 600 ml whipping cream
  • 0.5 can (~200 g) condensed milk
  • 25 ml Limoncello

Method

  1. Prepare berry sauce. Into a pan put 400 g frozen or fresh fruit; add 3 tbsp sugar, 50 ml water and 1 tsp lemon juice. Bring the mixture to a boil and cook, stirring constantly, until berries get soft and liquid thickens.
  2. Take the pan off heat and pour the contents into a separate bowl through a sieve. Press the fruit left on the sieve through with a spatula or a spoon. Set aside to cool.
  3. Into a large bowl pour 600 ml cold whipping cream. Whip it with an electric mixer until doubled in size and slightly thickened. It should take about 5 minutes.
  4. Add 200 g condensed milk and 25 ml Limoncello. Whisk them in with an electric mixer.
  5. Pour half of ice cream base into a cold 1.5l container. Pour in a few tbsp of sauce and mix through with a wooden pick to create a pattern. Gently pour the rest of ice cream base in and even out the top. Add a few tbsp sauce and repeat mixing. Keep the remaining sauce for decoration.
  6. Cover the container tightly and put it into a freezer for 5-6 hours.
  7. Take ice cream out of freezer 30 minutes before serving. Decorate with extra fruit and remaining sauce.
  8. Enjoy!
