Mini custard tiramisu

Today I'd like to share a recipe for a simple mini desert - custard-based tiramisu.

It's a simple and practical version of this classic Italian dessert that became hugely popular in Poland. Filling based on mascarpone and custard is smooth and, importantly, not too sweet. Soaked biscuits bring the characteristic coffee and liquer flavour, and whipped cream adds a touch of lightness.

Ingredients

  • 16 biscuits
  • 150 g mascarpone cheese
  • Custard (see below)
  • 200 ml coffee
  • 100 ml whipping cream
  • 1 tsp cocoa
  • 70 ml coffee liqueur

Custard

  • 250 ml milk
  •  2 egg yolks
  • 1 tsp vanilla paste
  • 2 tbsp (~30 g) cornflour
  • 1/2 cup (~100 g) sugar

Method

  1. Prepare custard. Pour half of milk into a pan. Add egg yolks, vanilla paste and cornflour into the second half. Stir thoroughly.
  2. Put the pan on medium heat and add sugar. Stir until sugar completely dissolves and bring to a slow boil. Turn heat down to low, add remaining milk, stir dynamically and bring the heat up to medium. Cook, stirring constantly, until thick.
  3. Transfer custard into a bowl and cover with plastic wrap. Set aside to cool completely.
  4. Combine strong, cold coffee and coffee liqueur.
  5. Into each glass put crushed 1.5 biscuit. Pour 3 tbsp of coffee syrup in and set aside to soak. Soak remaining biscuits, too.
  6. Put mascarpone and cool custard into a bowl together. Mix with an electric mixer until combined; you should expect it to be half-fluid.
  7. Put 2 tbsp of mascarpone mixture onto soaked biscuits. Add another layer of soaked biscuits and divide remaining mascarpone between glasses. Put glasses into a fridge.
  8. Whip cream with an electric mixer to stiff peaks. Divide it between the glasses.
  9. Sprinkle each serving generously with dark cocoa and decorate. Put the dessers into a fridge for at least one hour.
