Polish yeast pancakes with apples

Today I'd like to share a recipe for a dish seasoned with cinnamon and nostalgia - fluffy yeast pancakes with apples. 

 

I look at the plate with pancakes and what I see instead are the enormous amounts of pancakes my Grandma would fry. Luckily, this is much more manageable and I think they'll disappear in no time - as they are fluffy, delicate and smell incredibly. The combination of apples and cinnamon are one of the best matches you can encounter in the kitchen - and all of this is seasoned with a pinch of nostalgia that takes me back to careless childhood times.

Ingredients

  • 2 cups (~250 g) flour
  • 1 tbsp sugar
  • 1 tsp vanilla sugar
  • 7 g dry yeast
  • 1/2 tsp cinnamon
  • 1 cup (~250 ml) milk
  • 1 large egg
  • 2 apples (220-250 g after peeling)
  • Frying oil (~30-50 ml)

Method

  1. Prepare yeast batter. Into a large bowl put 250 g wheat flour, 1 pack instant yeast, 1 tbsp caster sugar, 1 heaped tsp vanilla sugar and 1/2 tsp cinnamon. Mix through with a whisk.
  2. Into the bowl add 250 ml lukewarm milk and 1 egg. Mix the contents of the bowl with a silicone spatula until you get a smooth batter. Set the batter aside, covered, for one hour, to rise.
  3. Towards the end of the rise start working on the apples. Peel and core two medium apples. Cut them into eights and slice into 2 mm pieces.
  4. Transfer apple slices into the yeast batter and mix them in gently with a silicone spatula.
  5. Heat up a small amount of oil on a frying pan - add more oil in between the batches if needed. Put a heaped tbsp of batter onto the pan to form small pancakes and fry them at low heat for 2, 2.5 minutes on each side, until beautiful and golden. Turn them a few times during frying to prevent them from burning. Take ready pancakes out of the pan and put them onto a plate lined with a piece of kitchen roll to remove excess fat.
  6. Dust the pancakes generously with icing sugar and serve while warm.
  7. Enjoy!
