Baked sweet potato patties with guacamole and poached egg

I've always thought that the best way to eat healthy is to prepare interesting, flavourful dishes. That's why today I'm going to make baked sweet potato patties with guacamole and poached egg.
 
 

 
Patties are sweet and pleasantly spicy at the same time, guacamole brings in a refreshing note, while eggs are soothing and balance the dish. A proper flavourbomb, plus lots of fibre and healthy fats - a fantastic idea for a healthy beginning of the year!

Ingredients
Patties
  • 500 g sweet potatoes
  • 3 eggs
  • 15 ml olive oil
  • A small bunch of chives
  • A small bunch of parsley
  • 1/4 tsp chili flakes
  • Salt and pepper to taste
Guacamole
  • 2 ripe avocadoes
  • Spring onion
  • A bunch fresh coriander (~15 g)
  • 3 tbsp lime juice (~30 ml)
  • Salt to taste

Poached eggs

  • 8 eggs
  • 1.5 tbsp vinegar
  • 1 tbsp salt
Method
  1. Peel sweet potatoes and grate them on a coarse grater. Chop herbs and add them to sweet potatoes. Add 3 eggs and olive oil. Season with salt, pepper and chili flakes. Stir thoroughly.
  2. Divide the batter into 8 parts. Form patties out of each part directly on a baking tray lined with baking paper. The patties will be rather wet.
  3. Bake the patties in a conventional oven preheated to 200 deg C for 30 minutes. Turn them after the first 20 minutes.
  4. Prepare guacamole. Open avocadoes and remove pits. Scoop flesh out into a bowl and mash it with a fork. Finely chop spring onions and fresh coriander; add them to avocado. Pour in lemon juice and season to taste with salt. Mix thoroughly.
  5. Bring a pot of water to a boil and turn the heat down to medium. Into hot, but not boiling water put 1 tbsp salt and pour in 1 tbsp vinegar for each 1 liter of water in the pot. Create a swirl in the pot with a fork and break an egg into the pot. Cook for 3 minutes. Repeat with all the eggs.
  6. Assemble patties. Put 1/8 of guacamole and 1 egg onto each patty. Top out with chives, chili flakes and salt and pepper.
  7. Enjoy!
