Today I'd like to share a recipe for nachos, the universal Mexican classic made out of tortilla chips.
This recipe will satisfy not only the fans of Mexican cuisine. Crunchy chips made from tortilla combined with aromatic meat sauce, spicy jalapeño peppers and pico de gallo will make you feel as if you were in Mexico. Everything is balanced by smooth guacamole and cream.

Ingredients
- 4 tortillas
- Meat and bean sauce
- 100 g freshly grated cheese
- Tomato salsa - pico de gallo
- Guacamole
- Sour cream
- Jalapeño peppers
Meat and bean sauce
- 500 g minced beef
- 1 can red kidney beans
- 1/2 onion
- 2 tsp oil
- 1.5 tsp salt
- 1 tsp granulated garlic
- 1 tsp granulated onion
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 1.5 tsp oregano
- 1/4 tsp blach pepper
- 1 tsp salt
- Water
Method
- Prepare tortilla chips. Cut tortillas to desired size and spread them on a baking tray lined with baking paper.
- Prepare bean paste. Finely chop onion. Crush red kidney beans. Onto a hot pan pour 1 tsp oil and fry the onion at medium heat. Once onion is golden, add crushed beans and fry them together. Pour in 0.5 cup water and cook, stirring, until a paste of desired texture forms.
- When beans are ready, put tortilla chips into a oven preheated to 180 deg C (with fan) for 15 minutes.
- Prepare meat and bean sauce. Heat up 1 tsp of oil in a pan. Add minced beef and brown it. Discard excess fat. Add spices and bean paste. If the sauce is too thick, add more water, but be careful not to thin it out too much.
- Spread half of grated cheese on top of baked chips. Grill for 3-4 minutes to melt the cheese.
- Cover melted cheese with sauce and jalapeño peppers; spread remaining cheese on top. Add extras: salsa, guacamole and sour cream. Serve warm.
