Mars bar mini cheesecakes

Today I'd like to share a treat for everyone with a sweet tooth! We'll prepare Mars bar mini cheesecakes with mascarpone-based filling, topped off with a layer of butterscotch and chocolate. 


The combination of milk chocolate, butterscotch and thick chocolate filling is perfect in its simplicity and tastes exactly like the Mars bar. You can prepare these desserts easily for a party in smaller portion sizes, say 100 ml, or as I do here, in bigger portions just for the immediate family. Whatever the size, they'll melt in your mouth!

List of ingredients

Chocolate filling

  • 100 g milk chocolate
  • 150 g whipping cream
  • 150 g mascarpone cheese

Topping

  • 50 g milk chocolate
  • 50 g whipping cream

Also

  • 4 heaped tbsp butterscotch (~170 g)
  • 4 tbsp crushed chocolate biscuits (~50 g)
  • 4 small Mars bars
  • 4 Mars bar sweets

Method

  1. Melt 100 g milk chocolate in a double boiler or in a microwave oven at full power, stirring chocolate every 15-20 seconds. Set chocolate aside to cool.
  2. Crush 50 g biscuits with a knife or a ziplock bag and a rolling pin.
  3. Cut a few small Mars bars in 0.5 cm cubes.
  4. Put 150 g cold mascarpone and 150 g cold whipping cream into a bowl. Beat with an electric mixer until soft peaks. Add in melted chocolate at room temperature. Stir through with a mixer at low speed only until just combined. The filling will thicken up visibly, but it shouldn't stiffen up completely.
  5. Divide crushed biscuits between 4 serving cups. Put a layer of cubed Mars bars on top and cover them with equal portions of chocolate filling. Put 1 heaped tbsp of butterscotch on top. Put desserts into a fridge for 15 minutes to firm up butterscotch.
  6. Put 50 g milk chocolate and 50 g whipping cream into a bowl. Heat them together in a microwave oven at full power for 90 seconds, stirring every 15 g seconds to prevent chocolate from scorching, until combined. Set topping aside for 5-10 minutes to cool.
  7. Divide topping equally between the desserts. Decorate with Mars bar sweets.
  8. Enjoy!
