Mixed berry crumble

Today I'd like to share a recipe that will bring a taste of summer in the middle of winter! We'll prepare a quick dessert made out of frozen fruit and crumble - it will work great both as a single serve dessert and as a dish approaching a cake.

 

A few minutes of work, half an hour in the oven and our delicious dessert will be ready. As it usually happens with frozen fruit, they are slightly tart and contrast with sweet, crunchy crumble. The dessert is great served warm along some whipped cream, vanilla ice cream or, as in my case, custard.

List of ingredients

Crumble

  • 1/2 cup (~80 g) flour
  • 1/2 cup (~100 g) golden caster sugar
  • 4 tbsp (~40 g) ground almonds
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 100 g unsalted butter
  • 4 tbsp (~40 g) oats
  • 4 tbsp (~40 g) almond flakes
Fruit
  • 500 g frozen fruit
  • 1 tbsp cornstarch (~20 g)
  • 1 tbsp icing sugar (~20 g)

Method

  1. Put 80 g wheat flour, 100 g golden caster sugar and 40 g ground almonds into a bowl. Add 1/2 tsp cinnamon and a small pinch of salt. Mix dry ingredients through until they are evenly distributed.
  2. Add 100 g cubed cold butter to the bowl. Combine it with dry ingredients to wet sand consistency. You can use your fingertips, a knife or a confectionery knife - just try not to warm up the butter too much.
  3. Add 40 g oats and 40 g almond flakes to the crumble. Mix them in gently with a wooden spoon, until just distributed.
  4. Add 20 g cornflour and 20 g icing sugar to 500 g frozen fruit. Stir through carefully, only until fruit are covered.
  5. Transfer fruit to a square ovenproof dish (23 x 23 cm) or divide them equally between 6 ramekins, 200 ml in volume. Cover them with a generous crumble layer.
  6. Put the dessert into a conventional oven preheated to 180 deg C for 30-35 minutes, until crumble is beautiful and golden and the fruit are cooking.
  7. Take the crumble out of the oven and set it aside for 5-10 minutes to cool slightly. Serve the dessert along some whipped cream, vanilla ice cream or custard.
