Banana bread with dates and walnuts

Today I'd like to share a recipe for a simple cake that's a must when you want to use up ripe bananas - banana bread with dates and walnuts.


This simple combination gives an amazing result! The cake is moist and intensely banana, nuts bring in not only flavour, but also a bit of pleasant crunch, while dates come with natural caramel notes.

List of ingredients

  • 125 g unsalted butter
  • 4 handfuls (~180 g) dates
  • 3 ripe medium bananas (500 g with peel / 350 g peeled)
  • 1 tbsp lemon juice
  • 125 g sugar
  • 2.5 cups wheat flour (~300 g)
  • 2 handfuls (~50 g) walnuts + a few walnuts for decoration
  • 2 large eggs (~120 g) at room temperature
  • 1 tsp baking powder
  • A small handful banana chips (~20 g) 

Method

  1. Melt butter and set it aside to cool.
  2. Cut dates into small cubes.
  3. Mash peeled bananas into a thin puree with a fork. Add 1 tbsp lemon juice and mix it in.
  4. Put flour, sugar and baking powder into a bowl. Add mashed bananas, cool butter and lightly beaten eggs. Mix batter with an electric mixer at low speed only until the ingredients combine.
  5. Add chopped dates and walnuts to the batter. Mix them in gently with a silicone spatula until they are evenly distributed.
  6. Pour batter into a greased loaf tin, 21 x 10 cm, lined with baking paper. Even out the top of cake and decorate it with banana chips and remaining walnuts.
  7. Bake the cake in a conventional oven preheated to 160 deg C for 75 minutes, until a skewer inserted into the middle of the cake comes out clean.
  8. Take ready cake out of the oven and set it aside in the baking tin for 10 minutes to cool slightly. Take the bread out of the tin then and cool it completely on a wire rack.
