Breakfast butter rolls

Today I'd like to share a recipe for breakfast butter rolls with all enthusiasts of homemade buns.

 


These are fluffy rolls for special weekends that will bring every breakfats to a whole new level. The buttery flavour is insane, and the crust is beautifully browned. Add some jam, Nutella - or go the other way and choose some cooked meats and veggies - for the perfect start of your day.

List of ingredients

  • 3.5 cups (~500 g) bread flour, plus a bit for dusting
  • 1 tsp salt
  • 4 tbsp (~50 g) sugar
  • 1 tbsp dry yeast (~10 g)
  • 4 large eggs (~240 g)
  • 140 ml milk
  • 250 g butter softened at room temperature

Method

  1. Put flour into a kitchen robot bowl. Add sugar and salt on one side of the bowl and yeast on the opposite side. Pour in 140 ml lukewarm milk and add 4 large eggs. Mix all the ingredients together to start with. Use an electric mixer fitted with a dough hook at low speed at first and then increase the speed for a few minutes to medium, until smooth, elastic dough forms. Add butter and continue kneading for a few minutes until it is fully incorporated in the dough.
  2. Transfer the dough into a bowl, cover it tightly with a plastic wrap and put it into a fridge overnight, or at least for a few hours.
  3. Take the dough out of the fridge and turn it out onto a floured work surface. Knead it shortly to punch out air. Divide the dough into 16 equal parts and form 16 round, smooth rolls.
  4. Place the rolls in a greased baking tin lined with baking paper. Cover them with a kitchen towel and set them aside for 2-3 hours to rise.
  5. Bake the rolls in a conventional oven preheated to 190 deg C for 18-20 minutes, until a skewer inserted into the largest roll comes out clean. Don't judge baking time by the colour of the rolls - they will brown very quickly because of the butter content. Take the rolls out of the oven and place them on a wire rack to cool.
