Cranachan - traditional dessert with raspberries and a dash of whisky

Today I'd like to share a recipe for a simple dessert for all whisky lovers! Cranachan, a traditional Scottish dessert, is a delicious combination of curd cheese, raspberries, honey and, of course, whisky.

Traditionally, cranachan was served during end of harvest feasts. People would sit at a table covered with bowls of individual ingredients; everyone would assemble their own cranachan using favourite proportions. Not just a delicious, but also joyous affair!

List of ingredients

  • 75 g rolled oats
  • 230 g raspberries + some for decoration
  • 200 ml whipping cream
  • 150 g full fat curd cheese - or Scottish crowdie
  • 50 g honey
  • 15 ml whisky

Method

  1. Put 75 g rolled oats into a hot pan and roast them for a few minutes, stirring constantly, until they release a faint, pleasant, nutty aroma. Take ready oats off heat and transfer them to a plate to stop roasting process and cool them down a bit.
  2. Crush 230 g raspberries with a fork to get a sauce with large pieces of fruit.
  3. Pour 200 ml cold whipping cream into a bowl and add 150 g crushed, full fat curd cheese, 50 g honey and 1 tbsp whisky. Mix them together until a thick cheese mixture forms. Add more honey or whisky to taste if required.
  4. Once you get a desired consistency, add 80% of roasted oats and fold them in with a spatula. 
  5. Put a heaped tbsp of cheese mixture into each of four 200 ml glasses. Put crushed raspberries onto cheese, cover them with the next later of cheese and continue until you fill a glass.
  6. Scatter some reserved roasted oats on top of the final cheese layer. Decorate each dessert with some extra raspberries and honey.
  7. Enjoy!
