No bake chocolate cookies

Today I want to share a recipe for a very simple and quick dessert. We'll prepare no bake chocolate cookies that will combine the flavours of cocoa and peanut butter.

 

Cookies come out soft on the inside, pleasantly sweet, with easily distinguishable peanut notes. Hazelnuts add a nice crunch, while oats provide a bit of structure and characteristic taste.

List of ingredients

  • 125 ml milk
  • 115 g unsalted butter
  • 400 g (~2 cups) sugar
  • 30 g (~3 tbsp) dark cocoa
  • 130 g smooth peanut butter
  • 1 tsp vanilla paste
  • Pinch of salt
  • 200 g (~2 cups) rolled oats
  • 100 g hazelnuts, blanched and roughly chopped

Method

  1. Pour 125 ml milk into a thick-bottomed pot. Add 115 g cubed butter, 400 g white sugar and 30 g dark cocoa to the pot. Heat up the contents of the pot over low heat, stirring constantly, until they combine and form a uniform, smooth liquid.
  2. Turn up the heat to medium then and bring everything to a boil. Cook the cookie batter until it reaches 105 - 110 deg C. It took around 3 minutes in my case. It is worth using a kitchen thermometer here, because reaching the correct temperature is key. Too low temperature will prevent the cookies from setting, while too high temperature may make cookies set too quickly, preventing you from shaping them.
  3. Once the batter reaches correct temperature, take the pot off heat. Add 130 g smooth peanut butter, a generous tsp of vanilla paste and a pinch of salt to the batter straight away. Mix everything together with a wooden spoon, until peanut butter gets incorporated in the batter. Don't mix the batter for too long; if you cool it too much, it will start setting.
  4. Add 200 g  rolled oats and 100 g roughly chopped hazelnuts to the batter. Mix the contents of the pot until cocoa batter covers all oat and nuts.
  5. Shape the cookies: place small portions of batter on a tray lined with baking paper. I'm using a medium ice cream scoop, but you can use a regular tablespoon as well. Set the cookies aside for about one hour to firm up.
