Homemade hot chocolate

Today I want to share a way of making these long, winter evenings better. We'll prepare homemade hot chocolate, decorated with whipped cream and cinnamon.

 

It takes a bit longer to prepare the drink this way, compared to a store-bought version, but it pays back with deep rich chocolate flavour and velvety texture. Cinnamon notes are prominent, and the whipped cream provides a bit of balance. A fantastic dessert to warm you up on a cold evening!

List of ingredients (3 servings, 200 ml each)

  • 120 g whipping cream (36%)
  • 500 ml milk
  • 1 tsp cinnamon, plus a bit for sprinkling on top
  • 1 tsp vanilla paste
  • 1tbsp dark cocoa (~12 g)
  • 100 g dark chocolate (72%)
  • 1 tbsp sugar (~15 g)
  • Pinch of salt

Method

  1. Pour around 120 g cold whipping cream (36%) into a medium bowl and beat it with an electric mixer until stiff. Once you've got the right texture, put whipping cream aside into a fridge as you move on to hot chocolate.
  2. Pour 500 ml milk into a medium pot with a thick bottom. Add a tablespoon of dark cocoa, heaped teaspoon of cinnamon and a teaspoon of vanilla extract. Turn the heat on to low and stir through the contents of the pot until smooth. Warm milk up together with the spices for around 10 minutes, stirring constantly. Take pot off heat then and pass milk through a fine sieve.
  3. Pour milk back into the same, rinsed pot. Add 100 g dark chocolate (72%), 1 tablespoon of sugar and a small pinch of salt to the hot milk. Stir through the contents of the pot and slowly bring the mixture to a low simmer, stirring constantly. Once the liquid starts bubbling, cook chocolate over low heat for around 5 minutes, until smooth and thickening drink forms.
  4. Once you've got the right texture, hot chocolate is ready to serve. I'm dividing mine between 3 glasses, 200 ml each, filling them roughly 3/4 of the way. Place 2 tablespoons of freshly whipped cream and sprinkle a bit of cinnamon on top.
