Enjoy this recipe for a quick and tasty ham and mushroom pasta.
It's an excellent lunch idea for busy people; once you slice up a few ingredients, the sauce is done in time it takes the pasta to cook.
Ingredients
- 200 g mushrooms
- 300 g smoked ham
- 3 thyme sprigs
- 1 bunch of parsley
- 150 ml single cream
- 2 egg yolks
- 5 tbsp (40 g) freshly grated Parmesan cheese
- 2 tbsp oil
- 2-3 garlic cloves
- 220 g dry pasta of choice
- salt and pepper to taste
Method
- Prep the ingredients.Clean the mushrooms and slice them up thinly. Slice the ham into small cubes. Slice up parsley and thyme.
- Prepare the sauce base. Add yolks and Parmesan cheese to cream. Mix it well.
- Cook the pasta according to the instructions on the packaging, al dente. (It took 7 minutes in my case).
- Meanwhile, heat up the oil in a frying pan and fry the ham for 1-2 minutes. Add freshly pressed garlic and fry for another 30 seconds. Add mushrooms and fry for 3-4 minutes on high heat, until golden. Add thyme, mix it through and turn off the heat.
- Drain the pasta, reserving one ladleful of water.
- Add pasta to the pan. Add pasta water and cream mixture. Turn on the heat on low and keep it on for about 2 minutes, until the sauce thickens and becomes creamy in texture. Don't boil the sauce!
- Add parsley, salt and pepper; mix it through.
- Serve with some extra parsley.
