Pear and chocolate cake

 Enjoy this recipe for pear and chocolate cake!


 

Cake is moist yet fluffy; chocolate flavour is bold yet not overpowering; pears are soft and subtly sweet; and the orange notes round everything up. Check for yourself!

Ingredients

  • 2 pears  
  • 125 g wheat flour
  • 75 g wholemeal flour
  • 2 tbsp (25 g) cocoa
  • 1 tsp baking powder
  • 175 g unsalted butter
  • 175 g sugar
  • 3 eggs
  • 2 tbsp freshly squeezed orange juice
  • peel of one orange

Method

  1. Prepare the fruit. Wash and peel the pears, remove the cores and slice the fruit thickly. Keep the slices together so they would keep the shape.
  2. Sift plain flour and cocoa into a bowl. Add baking powder and wholemeal flour. Mix until combined.
  3. Add butter and sugar into a separate bowl. Mix with a mixer at medium speed until light and fluffy. Add eggs by one, mixing the batter until they are fully incorporated.
  4. Decrease the mixer speed and add flour in batches, mixing each time until the flour is fully absorbed.
  5. Add orange juice and peel; mix them in.
  6. Line a baking tin with baking paper; I'm using a circular tin 20cm in diameter. Pour the batter in and even it out. Place pears on top, trying to keep the shape of the fruit.
  7. Bake the cake in a preheated 180oC oven (160oC fan) for about 50 minutes, until a skewer inserted in the middle of the cake comes out clean.
  8. Once the cake is cool, sprinkle icing sugar on top. 
  9. Enjoy!
