Enjoy this recipe for pear and chocolate cake!
Cake is moist yet fluffy; chocolate flavour is bold yet not overpowering; pears are soft and subtly sweet; and the orange notes round everything up. Check for yourself!

List of ingredients (20 cm circular baking tin)
- 2 pears
- 125 g wheat flour
- 75 g wholemeal flour
- 2 tbsp (25 g) cocoa
- 1 tsp baking powder
- 175 g unsalted butter
- 175 g sugar
- 3 eggs
- 2 tbsp freshly squeezed orange juice
- peel of one orange
Method
- Prepare the fruit. Wash and peel the pears, remove the cores and slice the fruit thickly. Keep the slices together so they would keep the shape.
- Sift plain flour and cocoa into a bowl. Add baking powder and wholemeal flour. Mix until combined.
- Add butter and sugar into a separate bowl. Mix with a mixer at medium speed until light and fluffy. Add eggs by one, mixing the batter until they are fully incorporated.
- Decrease the mixer speed and add flour in batches, mixing each time until the flour is fully absorbed.
- Add orange juice and peel; mix them in.
- Line a baking tin with baking paper; I'm using a circular tin 20cm in diameter. Pour the batter in and even it out. Place pears on top, trying to keep the shape of the fruit.
- Bake the cake in a preheated 180oC oven (160oC fan) for about 50 minutes, until a skewer inserted in the middle of the cake comes out clean.
- Once the cake is cool, sprinkle icing sugar on top.
