Panna cotta with raspberry sauce

Today I'd like to share a recipe for another romantic dessert for two! This time we'll get inspired by the Italian cuisine - and we'll prepare elegant, creamy panna cotta with raspberry sauce. 


Panna cotta is delicate and creamy, with subtle vanilla undertones, while the raspberry sauce is pleasantly tart. I promise that if you prepare it for your second half, they will not look at you sideways!

 Ingredients

Panna cotta (4 servings)
  • 400 ml whipping cream
  • 150 ml milk
  • 4 tbsp (~50 g) sugar
  • 3.5 gelatin leaf
  • 1 tsp vanilla extract

    Raspberry sauce (2 servings)
  • 150 g raspberries
  • Juice of one lime (~40 ml)
  • 2 tbsp (~30 g) sugar

Method

  1. Put a few gelatin leaves into cold water for about 5 minutes to soak. The exact amount will depend on your gelatin brand - the directions on my packet instruct me to use 3.5 leaves for 500 ml liquid.
  2. While gelatin is soaking, prepare the other ingredients. Into a pan pour 400 ml whipping cream and 150 ml milk. Add sugar and 1 tsp vanilla paste.
  3. Turn the heat on to medium low until cream starts simmering at the edges and the liquid looks as if it is about to boil. Take the pan off heat then and set aside for a minute.
  4. Press gelatin to remove excess water and add it to cream. Stir to dissolve gelatin. 
  5. Divide the liquid between 4 glasses - I used 4 x 200 ml glasses and propped them so they would lie at an angle. Put panna cottas for a few hours into a fridge to set.
  6. Prepare the sauce. Put raspberries into a small pan. Add 2 tbsp sugar and juice of one lime. Mix the contents of the pan and heat them up at medium low heat until the raspberries start breaking up and the mixture starts boiling slowly and resembling thin jam. Once this happens, take pan off heat.
  7. Pour the contents of the pan through a sieve into a small jug to remove the seeds. Set sauce aside to cool completely.
  8. Pour cool sauce on top of set panna cotta. Decorate with a lime slice or a few fresh mint leaves.
  9. Enjoy!
