Autumn muffins with apples and cinnamon


Today I'd like to share a recipe that'll let you hold the flavour of Autumn in the palm of your hand. We'll prepare world's smallest apple pies - simple cinnamon muffins with apples, crumble and delicious cinnamon icing.


Muffins are incredibly fluffy and they smell amazing. They're pleasantly cinnamon-y in flavour; apples add variety to the consistency and make everything moist. Add in crunchy crumble and this heart-warming icing...

 List of ingredients

  • 1 apple (~150 g)
  • 2 cups (~250 g) wheat flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 125 g unsalted butter
  • 1 cup (~150 g) brown sugar
  • 3 eggs
  • 150 g sour cream
  • 1 tsp vanilla extract

Crumble

  • 3 tbsp (~40 g) wheat flour
  • 1 heaped tbsp (~20 g) brown sugar
  • 20 g butter

Icing

  • ½ cup (~50 g) icing sugar
  • 1/2 tsp cinnamon
  • 1 tbsp water

Method

  1. Prepare crumble. Into a small bowl put 40 g wheat flour and 20 g brown sugar. Add 20 g cold unsalted butter and rub it in with your fingers until the mixture resembles wet sand. Set crumble aside.
  2. Peel and core one large apple. Cut it into 12 pieces and then into small cubes.
  3. To 250 g wheat flour add 3/2 tsp baking powder, 1 heaped tsp cinnamon and 1/2 tsp ground ginger. Stir through with a whisk to distribute the spices evenly.
  4. To 125 g butter softened at room temperature add 50 g brown sugar. Beat them together with an electric mixer until light and fluffy. Add 3 eggs, one at a time, mixing each in fully before adding the next. Add in 150 g soured cream and 1 tsp vanilla extract. Mix with a mixer until all ingredients are fully combined.
  5. Add flour and spices mix into the batter, in batches, mixing everything in before adding the next batch.
  6. Add cubed apple directly into the batter and mix it in gently with a silicone spatula, taking care not to damage the apple.
  7. Divide the batter equally into 12 parts and use it to fill a muffin tray lined with muffin cases. Sprinkle generous amount of crumble on top of each muffin.
  8. Bake muffins in a conventional oven preheated to 190 deg C for 20-25 minutes, until a skewer inserted into the middle of a muffin comes out clean.
  9. Take ready muffins out of the oven and set aside to cool in the tray for about 10 minutes. Take muffins out of the tray onto a wire rack and cool them completely.
  10. Prepare the icing. Into a small bowl add 50 g icing sugar and 1/2 tsp cinnamon. Pour in 1 tbsp of water and mix it in patiently until you get a smooth, uniform icing. Pour icing on top of cooled muffins.
