Today I'd like to share a recipe for a sweet treat that will satisfy both cookie and chocolate lovers. We'll prepare beautifully chocolate-y cookies filled with Nutella.
These cookies make me think of brownies - they are crunchy on the outside and moist inside. Nuts bring a bit of texture and are pleasantly crunchy, while Nutella is just as delicious as ever. These cookies will easily replace your tea, supper and breakfast as well, but we all sin from time to time...

Ingredients
- 12 tsp (~180 g) Nutella
- 100 g hazelnuts
- 2 cups (~250 g) flour
- 2 tbsp (~35 g) cocoa
- 1/2 tsp baking powder
- 1/2 tsp salt
- 125 g unsalted butter
- 1 heaped cup (~175 g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 100 g milk chocolate (chopped or chocolate chips)
- 100 g dark chocolate (chopped or chocolate chips)
Method
- Prepare the filling. Place 12 heaped tsp of Nutella onto a tray lined with baking paper. Put it into a freezer for at least 1 hour.
- Roughly chop 100 g blanched hazelnuts.
- Into 250 g flour add 2 tbsp cocoa, 1/2 tsp baking powder and 1/2 tsp salt. Mix through with a whisk until everything is distributed in flour.
- Into a separate bowl add 125 g unsalted butter softened at room temperature and add 175 g brown sugar. Beat them together with an electric mixer until light and fluffy. I'd suggest starting at low speed and slowly increasing mixer speed. Add 1 egg and mix it in with a mixer until uniform. Pour in 1 tsp vanilla extract and mix it in.
- Add flour to batter in a few batches and mix in thoroughly. Batter will become very dense towards the end, so you may want to switch to a wooden spoon.
- Add chopped hazelnuts, 100 g milk chocolate chips and 100 g dark chocolate chips to the batter. Stir them in with a wooden spoon until well distributed.
- Form cookies. Shape even portions of the batter into 12 large balls. Place them on two baking trays lined with baking paper, 3 cm apart.
- Flatten each ball on the palm of your hand and press frozen Nutella into it. Close the batter tightly around Nutella.
- Bake cookies in a conventional oven preheated to 190 deg C for 12 minutes. Take cookies out of the oven after this time and leave them on the baking tray until completely cool.
