Fabulously simple cauliflower salad

Today I'd like to share a recipe for a fabulously simple cauliflower salad that will work great both on a festive table and during a barbecue.

 

I can't decide what I like the most about it: crunchy cauliflower, fresh radishes, or feta-based sauce. In addition it's healthy and you can make it in no time at all.

Ingredients

  • 1 medium cauliflower (~750 g florets)
  • A bunch of radishes (~250 g)
  • 1 feta cheese (200 g)
  • 3/4 cup (200 g) natural yoghurt
  • 2 tbsp mayonnaise (~50 g) - I'm using Light mayo
  • A bunch fresh dill 
  • Salt and pepper to taste

Method

  1. Rinse a cauliflower and peel off green parts; gently cut off florets from the stem. Cut them into bite sized pieces.
  2. Slice a bunch of radishes thinly.
  3. Rinse a small bunch of dill. Remove thicker stems and chop.
  4. Prepare sauce. Crush 200 g feta with a fork to get small lumps. Add 200g natural yoghurt, 2 tbsp mayo and chopped dill. Mix the ingredients until fully combined. Season to taste with salt and pepper.
  5. Transfer cauliflower and radishes into a large bowl. Pour sauce in and mix thoroughly to cover the vegetables with it.
  6. Enjoy!
