Today I'd like to share a recipe that says 'Polish Christmas' like nothing else. We'll prepare a kutia - a sweet dessert made here out of poppy seeds and millet groats. We won't skip mandatory dried fruit and honey, of course.
I've always heard that kutia is too sweet, but I think this version is just perfect. The bit I like the most are freshly blanched hazelnuts - they taste divine and smell even better. Serve kutia in a bowl or shape it into individual servings, whatever floats your boat - just remember to serve it along some whipping cream.

- 200 g poppy seeds
- 500 ml milk
- Dried fruit (I used 60 g dry apricots, 60 g dates, 60 g raisins)
- 100 g nuts (I used freshly blanched hazelnuts)
- 100 g almonds
- 3 tbsp (~60 g) orange peel
- 100 g millet groats
- 1/2 cup (~150 g) honey
- 1 tsp vanilla paste
- Extra dried fruit and nuts to decorate
- Whipping cream to serve
Method
- Put 200 g poppy seeds into a fine sieve and rinse them thoroughly with cold running water. Transfer poppy seeds into a pot and pour in 500 ml milk. Stir through the contents of the pot, put it over medium-low heat and bring milk to a boil. Cook poppy seeds for around 5 minutes.
- Take pot off heat then and discard milk. Transfer poppy seeds back into a fine sieve and stir through to remove excess milk. Set poppy seeds aside to cool.
- Cut 60 g dried apricots and dates into small, 0.5 cm cubes. Roughly chop 100 g blanches almonds and nuts.
- Prepare 100 g millet groats according to package instructions - I cover mine with 200 ml boiling water and I cook them over low heat, covered, for 10-15 minutes. Once millet groats are ready set them aside, covered, to cool slightly.
- Mince poppy seed twice with a mincer fitted with fine sieve.
- Add chopped almonds, nuts, apricots and dates as well as 60 g each of candied orange peel and raisins. Pour in 150 g honey and 1 tsp vanilla paste. Stir the contents of the bowl until fruit, nuts and honey are well distributed in poppy seeds.
- To finish, add slightly warm millet groats and fold it in gently. Decorate kutia with additional dried fruit and serve with whipping cream.
