Today I'd like to share a recipe for one of my favourite party salads - and a dish frequently prepared for gatherings in my family home.
We'll prepare a quick and delicious salad of tortellini, pineapple and leek. Just a few easily available ingredients, and the outcome is truly great. The main star are, of course, tortellini, but they have good support. Blanched leek is pleasant and not too sharp, and everything is rounded out with crunchy sweetcorn and sweet pineapple. A simple and tasty salad that you can prepare in less than 30 minutes.

List of ingredients
- 1 leek (~ 120 g)
- 1 can pineapple (280 - 300 g, drained)
- A bunch of dill
- 1 can sweetcorn (~300 g, drained)
- 1 pack tortellini (~300 g) - I used cheese and ham
- 3-4 tbsp mayo (~100 g, I used light)
- Salt and pepper to taste
Method
- Slice one leek lengthwise almost through and rinse out sand under running water. Cut it in half then and slice it into thin, roughly 1 mm strips. Cube drained pineapple into 1 cm pieces. Finally, chop a small bunch of dill finely.
- Put chopped leek into a fine sieve and pour boiling water straight out of a kettle through it. That will make it softer and not as sharp. Set it aside for a few minutes to cool.
- Prepare one pack tortellini according to manufacturer's instructions. I put my tortellini into salted boiling water and cook them for around 3 minutes. I drain them then, I rinse them with cold water to stop the boiling process and I set them aside for a few minutes to dry.
- Transfer cooked tortellini, blanched leek, 300 g sweetcorn and cubed pineapple into a large bowl. Add 100 g mayo and a generous tablespoon of chopped dill. Stir all the ingredients together and season salad to taste with salt and ground black pepper.
