Today I'd like to share a recipe for an oriental-style salad of couscous. It'll work as a light meal, but it'll truly flourish as a side for roasted meats.
Oranges are sweet and they contrast with salty feta; mint and coriander leaves are refreshing, and everything is underlined by spicy harissa. You can also taste aromatic cinnamon notes in the background. A full set of flavours - delicious and healthy!

List of ingredients
- 3/4 cup (~150 g) dry couscous
- 2 oranges
- Juice and zest of one lemon
- 1 tbsp olive oil
- 3 tsp harissa (~30 g)
- 1 tsp cinnamon
- 1 tsp ground coriander
- 1 red onion (~70 g)
- 1 pack feta cheese (~200 g)
- Small bunch of mint
- Small bunch of fresh coriander
- 1 handfuls (50 g) fresh spinach
- Salt to taste
Method
- Cook couscous according to package instructions; I added hot water to my couscous and set it aside, covered, for a few minutes, until it soaked up all the water.
- Peel 1 and 1/2 orange with a sharp knife. Carefully remove membrane from each orange segment.
- Fluff up couscous with a fork and add the following to it: zest and juice of one lemon, zest and juice of 1/2 orange, 1 heaped tsp cinnamon, 1 tsp ground coriander as well as 1 tbsp olive oil. Finish it off with 3 tsp of harissa and 2 pinches of salt. Mix all the ingredients together thoroughly and set it aside to cool.
- Finely chop fresh coriander. Chop up mint, baby spinach and 2 small red onions. Cut feta into 1 cm cubes.
- Add everything into the bowl together with cooled couscous, leaving the delicate bits, feta and oranges, till the end. Stir the contents of the bowl gently not to damage cheese and fruit.
