Today I'd like to share a recipe for a very simple yet delicious summer dessert. We'll prepare blackberry fool, a classic British delicacy of whipped cream, yoghurt and refreshing blackberries that you can also sub with any other sour fruit.
The dessert is refreshing and perfect to serve on a warm day. The flavour of lightly sour blackberries is pleasantly interlaced with vanilla cream. It's light, fresh and disappears in no time!

- 450 g blackberries, plus a few for decoration
- 50 g (1/4 cup) sugar
- 20 g (2 tbsp) lemon juice
- 20 g (2 tbsp) gin
- 300 g whipping cream
- 1 tsp vsnilla paste
- 20 g (1 heaped tbsp) icing sugar
- 300 g Greek yoghurt
- mint leaves, for decoration
Method
- Put 450 g blackberries into a large pot. Add 50 g sugar and 2 tbsp freshly squeezed lemon juice. Turn the heat on to medium low and stir the contents of the pot until sugar dissolves and fruit release juices. Cook the sauce over low heat for around 10 minutes, until it thickens up slightly.
- Take pot off heat then and pour the sauce into a separate bowl. Optionally, add 2 tbsp gin, stir it through to distribute it in the sauce and set aside to cool completely.
- Pour 300 g cold whipped cream into a large bowl. Add 20 g icing sugar and 1 heaped tsp vanilla paste. Whip cream until it becomes thick and fluffy, but not stiff. Add 300 g cold Greek yoghurt. Mix them together at low speed, only until they combine.
- Add 1/3 blackberry sauce to cream and stir it through until you see white cream and pink sauce forming a whirl of colours in your bowl.
- Portion out the dessert. I'm using 4 glasses, 330 ml in volume each. Place 1 heaped tbsp of cream into each bowl and even it out. Add 1.5 tbsp sauce, making sure to get a few blackberries in. Repeat the layers until you run out of ingredients. Decorate each dessert with one mint leaf and one reserved blackberry. Serve the desserts immediately or put them into a fridge to cool.
