Today I'd like to share pleasantly sweet and refreshing homemade strawberry sorbet.
The dessert is very easy to make, and if you already have some frozen strawberries it'll come together in 10 minutes. The sorbet is smooth, lightly sweet, with light citrus notes. A perfect dessert for the heatwave!

- 600 g strawberries
- 60 g honey
- 30 g limoncello
- 50 ml water
- Mint, for decoration
Method
- Rinse and destem 600 g ripe strawberries. Depending on their size, cut them into quarters or halves to make them freeze faster. Transfer fruit into a freezer bag and put them into a freezer for an hour or two, until you can no longer crush them in your fingers. If you already have some frozen strawberries, you can skip this step.
- Put frozen strawberries into a worktop blender bowl and blend them at medium low speed. You will need a high power blender - my kitchen robot is 1000 W.
- Once the strawberries are roughly chopped, add 60 g honey and 30 g limoncello. Turn the blender speed up to medium and blend until fruit combine and become roughly uniform. As you blend, pour in 50 ml cold water - it will thin out the fruit and make the sorbet smoother and fluffier. At the end of this step sorbet should hold shape.
- Serve sorbet immediately or put it, covered, into a freezer for about an hour if you prefer more solid texture. If you make sorbet ahead, take it out of the freezer at least 30 minutes before serving.
