Today I'd like to share an idea for a light and nutritious breakfast - fluffy sweet cheese fritters.
You can serve them with your favourite jam, fruit, peanut butter or chocolate spread. I served mine with a bit of whipped cream, blueberries, raspberries and a generous amount of maple syrup. The fritters are soft and combine the flavour of vanilla and cream cheese. It's a simple dish that will be a winner with both kids and adults!

List of ingredients
- 3 eggs
- 1 tbsp (20 g) vanilla sugar
- 2 tbsp (30 g) white caster sugar
- 250 g cream cheese
- 1/2 tsp baking powder
- 100 g all purpose flour
- Frying oil (1 tbsp)
- Fruit, for serving
- Whipped cream, for serving
- Maple syrup, for serving
Method
- Pour three large eggs into a large bowl. Add 30 g white caster sugar and 1 tbsp vanilla sugar. Beat eggs and sugar with an electric mixer until they become light and fluffy, and the beaters start to leave visible marks in the batter.
- Add cream cheese in a few batches, combining it completely with the batter each time using a mixer at low speed.
- Sift 100 g all purpose flour and 1/2 tsp baking powder directly into the bowl. Fold them in with a silicone spatula, only until you can no longer see raw flour in the batter.
- Pour a bit of oil onto a hot pan, heat it up and spread with a paper towel. Place a heaped tablespoon of batter per fritter onto the oil and shape them into round fritters. Fry the fritters over medium low heat, covered, for around 3 minutes. Turn them over then and continue frying for 2 more minutes, until beautiful and golden on both sides. Take ready fritters out of the pan, transfer them onto a plate and cover with a piece of paper towel as you continue frying the next ones.
- Serve the fritters with your favourite jam, fruit, peanut butter or chocolate spread.
