Clafoutis - a light cherry dessert

Today I want to share a recipe for a very simple dessert that offers not only a subtle flavour, but also light texture. We'll prepare a clafoutis, a traditional French delicacy that is something between a fruit cake and a baked custard.


Our clafoutis is smooth, lightly sweet and subtly vanilla. The texture is delicate and melts in your mouth, while cherries provide a pleasant contrast. In addition, you can prepare it in just a few moments, without an electric mixer.

List of ingredients (1 dessert, 23 cm in diameter)

  • 60 g (~5 tbsp) sugar + 1 tsp
  • 3 eggs at room temperature
  • 50 g (~1/3 cup) all purpose flour
  • 300 ml milk
  • 1 tsp vanilla or almond extract
  • 350 g pitted cherries

Method

  1. Pour 3 eggs at room temperature into a bowl and add 60 g white caster sugar. Mix the contents of the bowl with a whisk, only until sugar dissolves in eggs and a uniform liquid forms. Once eggs and sugar combine, add 50 g wheat flour and mix until a smooth batter forms. Trickle in 300 ml milk next, stirring constantly. Finally, add 1 tsp vanilla or almond extract and stir it in.
  2. Put 350 g pitted cherries into the bottom of a greased, ovenproof dish, 23 cm in diameter. Arrange the cherries in an even layer and pour batter in to cover them.
  3. Put the clafoutis into an oven preheated to 180 deg C (no fan) for 45 minutes, until sides are puffed up, the middle is set and clafoutis is beautiful and golden. Halfway through, once the top sets, feel free to open the oven and scatter a bit of sugar on top of the clafoutis. After 45 minutes, take the clafoutis out of the oven and serve it immediately or set it aside for 1 hour to set.
