Today I want to share a recipe to make your dinner special: baked cauliflower in cheese sauce.
Baked cauliflower is tender, just perfect in texture. Distinct sauce not only brings flavour, but also forms a pleasant crunchy crust. It's a simple and quick dish that will work both as a side and as a light meal in its own right.

List of ingredients (ovenproof dish, 20 x 30 cm)
- 800 - 1000 g cauliflower (after chopping)
- 30 g butter
- 30 g flour
- 500 ml milk
- 120 g cheese (I'm using 60 g cheddar, 60 g red leicester)
- 20 g mustard
- Salt and pepper to taste
- 15 g breadcrumbs
- Butter, for greasing
- Fresh parsley
Method
- Rinse 1 medium cauliflower head and remove inedible green parts. Separate florets from the stem and cut them into bite size pieces.
- Transfer cauliflower into salted simmering water and cook it under cover. Take pot off heat after five minutes and drain cauliflower on a sieve. Set it aside for water to evaporate.
- Melt 30 g butter in a medium sized pot. Put 30 g all purpose flour onto hot grease and fry it over medium low heat for two - three minutes, stirring constantly, until it starts to release pleasant, slightly nutty aroma. Turn heat down to low then and add 500 ml milk in two batches. Stir the contents of the pot until smooth, lump-free liquid forms. Once all the milk is in turn heat back up to medium and cook the sauce for a few minutes, stirring, until it thickens up.
- Turn heat off and add 120 g cheese as well as 1 tbsp Dijon mustard to the pot. Stir the sauce until cheese melts and season to taste with salt and ground black pepper.
- Put cauliflower into a greased ovenproof dish and arrange it in an even layer across the surface. Cover the florets with cheese sauce. Scatter breadcrumbs on top.
- Bake cauliflower in an oven preheated to 200 deg C (no fan) for 15 - 20 minutes, until the top becomes golden and the sauce starts to boil. Don't keep the cauliflower in for too long, or it will become watery.
- Take dish out of the oven and set it aside for 10 minutes to cool slightly. Decorate with fresh parsley.
