Polish potato casserole - potato babka

Today I want to share a recipe for a simple and satisfying dinner: flavourful Polish potato casserole (potato babka) with pork belly, sausage and a load of fresh thyme.

The casserole is crunchy on the outside and delicate inside. Pork belly and sausage give it a lot of flavour, rounded out by fresh thyme and dry marjoram. It's a simple dinner that tastes great both straight out of the oven and refried on the next day.

List of ingredients

  • 150 g sausage
  • 250 g smoked pork belly
  • 1 tbsp oil
  • 2 kg starchy potatoes (1.5 kg after peeling)
  • 2 onions (~250 g)
  • 2 large eggs
  • 80 g (~4 tbsp) all purpose flour
  • 4 garlic cloves
  • 6 sprigs fresh thyme (~1 tbsp leaves)
  • 1 tbsp salt
  • 1 tbsp ground black pepper
  • 1 tbsp dry marjoram
  • Breadcrumbs

Method

  1. Slice 150 g sausage into half-moons, and cut 250 g smoked pork belly into small cubes. Optionally, heat up 1 tbsp oil in a pan. Transfer diced pork belly onto the pan and fry it for a few minutes, until it becomes golden and fat is rendered. Add sliced sausage and continue frying for three - four minutes over medium low heat. Take pan off heat then and set it aside as you move on to potatoes.
  2. Grated 1.5 kg peeled potatoes and 2 medium onions on a medium grater. If your potatoes release a lot of moisture, drain them on a fine sieve.
  3. Transfer grated potatoes and onions into a large bowl, including starch that got released during grating. Add two large eggs, 80 g all purpose flour, 4 garlic cloves pressed through a garlic press and thyme leaves picked from 6 sprigs. Season with a heaped tbsp each of dry marjoram, ground black pepper and salt. Add fried pork belly and sausage together with the fat they rendered. Stir the contents of the bowl until everything gets evenly distributed in potatoes.
  4. Transfer potato batter into a greased ovenproof dish covered with breadcrumbs, 20 x 31 cm. Even out the batter and scatter 1 tbsp breadcrumbs on top. 
  5. Put the casserole into an oven preheated to 200 deg C (no fan) for 70 - 80 minutes, until the babka is beautiful and golden, and a crunchy crust forms on top.
  6. Take ready casserole out of the oven and set it aside for 10 minutes to cool slightly. Serve it with sour cream or your favourite sauce.
