Curd cheese and banana pancakes

Today I want to share a recipe for curd cheese and banana pancakes.


These pancakes are a great idea for a quick breakfast or lunch. They are delicious and soft, as well as nutritious: curd cheese brings protein, while bananas provide fibre. Cheese flavour works great with fruit; add some of your favourite toppings and these pancakes will be loved by children and adults alike.

List of ingredients

  • 2 ripe bananas (~250 g)
  • 2 large eggs 
  • 1 tbsp (~20 g) honey
  • 1 tsp vanilla paste
  • 250 g low salt creamy cheese, such as cottage cheese, drained ricotta or ground curd cheese
  • 1 heaped tbsp (~50 g) sour cream (12%)
  • 4 heaped tbsp (~120 g) flour
  • Frying oil (~3 tbsp)

Method

  1. Peel two ripe bananas and mash them up with a fork until thin pulp forms.
  2. Put two eggs, 1 tbsp of your favourite honey and 1 tsp vanilla paste into a separate bowl. Cream them with an electric mixer until light and fluffy.
  3. Add mashed bananas, 1 heaped tbsp sour cream, 250 g low salt creamy cheese and 4 heaped tbsp flour to the batter. Mix them in with the mixer.
  4. Heat up frying oil in a pan. Place batter into the hot pan to form pancakes and fry them for two minutes per side, until beautiful and golden.
  5. Take ready pancakes out of the pan and place them on a plate lined with paper towel to get rid of excess fat.
  6. Serve the pancakes with your favourite toppings.
  7. Enjoy!
