Today I want to share a recipe for a simple summer dessert: peaches baked under a pleasant, crunchy crumble with almond and cinnamon notes.
Fruit come out soft and coated in a sweet, thick syrup. Crumble is pleasantly crispy and brings cinnamon and baked almond notes to the dessert. Add a scoop of vanilla ice cream to get a delicious, simple and quite a quick dessert.

List of ingredients (ovenproof dish, 23 cm in diameter)
Crumble
- 80 g (~1/2 cup) flour
- 100 g (~1/2 cup) fine cane sugar
- 40 g (~4 tbsp) ground almonds
- 1 tsp cinnamon
- Pinch of salt
- 100 g butter
- 40 g (~4 tbsp) oats
- 40 g (~4 tbsp) almond flakes
Fruit
- 600 g peaches
- 1 tbsp fine cane sugar (~20 g)
- 1 tbsp (~15 g) cornstarch
Method
- Prepare crumble. Put 80 g wheat flour, 40 g ground almonds, 100 g cane sugar, 1 tsp cinnamon and a small pinch of salt into a medium bowl. Stir through the dry ingredients shortly with a whisk until everything gets distributed in flour.
- Once dry ingredients are combined, add 100 g cold cubed butter. Rub butter into flour until they start to resemble wet sand.
- Once you get the right texture, add 40 g porridge oats and 40 g almond flakes to the crumble dough. Mix everything together, without kneading, until everything gets evenly distributed.
- Set crumble dough aside and move on to fruit. Transfer 600 g peaches cut into wedges into a large bowl. Add 1 tbsp of fine cane sugar and 1 tbsp of cornstarch. Stir everything together with a spatula until sugar and starch cover fruit.
- Put the fruit into a round ovenproof dish, 23 cm in diameter. Spread peaches in an even layer across the whole surface of the dish and cover them with a thick layer of crumble.
- Bake the dessert in an oven preheated to 180 deg C (no fan) for 35-40 minutes, until crumble becomes beautiful and golden, and peach syrup is visibly simmering.
- Take the dish out of the oven and set aside to cool slightly. You can serve peach crumble either hot or cold, so feel free to cool it down completely or set aside for just 10 minutes and serve while it's still hot.
