Today I want to share a recipe for a simple yet delicious and flavourful plum cake.
Fluffy, lightly moist cake will fill your kitchen with a pleasant orange aroma, while juicy plums will make you want to reach for the next slice. The cake is simple and quick to make, and it will sweeten any long Autumn evening.

List of ingredients (18 x 28 cm baking tin)
- 300 g wheat flour
- 2 flat tsp baking powder
- 180 g sugar
- 200 g kefir
- 100 g cool melted butter
- Zest of one orange
- Orange extract
- 300 g plums
- Icing sugar
Method
- Sift 300 g wheat flour and 2 flat tsp baking powder into a large bowl. Once you've removed all the lumps, add 180 g fine white sugar and stir through the contents of the bowl with a whisk until everything is evenly distributed.
- Add 200 g kefir, 100 g cool melted butter, 2 large eggs, around one tsp orange extract and zest from one well-scrubbed orange to the dry ingredients. Stir through the contents of the bowl shortly with a silicone spatula, only until uniform, smooth batter forms. All ingredients required for this cake should be at room temperature, so remember to take kefir and eggs out of a fridge at least one hour ahead.
- Pour batter into a baking tin lined with baking paper, 18 x 28 cm. Spread it evenly across the surface and even out the top. Arrange around 300 g plums on top.
- Bake the cake in an oven preheated to 180 deg C, no fan, for 35-40 minutes, until a wooden skewer inserted into the middle of the cake comes out clean, and the cake is beautiful and golden. Take cake out of the oven next and set it aside in the baking tin to cool.
- Decorate the cake with icing sugar, icing or a chocolate glaze.
