Homemade shortbread with chocolate chips

Today I want to share a lightning-quick dessert that almost makes itself. This time we'll prepare very simply homemade shortbread cookies, enriched with a tad of dark chocolate. 

Perfectly sweet, pleasantly buttery and incredibly tender cookies are a dessert that is almost obscenely good compared to effort it requires. Cookies almost melt in your mouth and deep chocolate flavour provides a nice contrast to sweetness of shortbread. A simple thing that will make any afternoon coffee even nicer.

List of ingredients (for a 18 x 28 cm baking tin – 18 cookies)

  • 225 g (~1.5 cup) flour
  • 75 g (~0.5 cup) cornstarch
  • 100 g (~0.5 cup) sugar
  • 200 g butter
  • 75 g chocolate chips

Method

  1. Put 225 g all purpose flour into a large bowl and add 75 g cornstarch and 100 g fine white sugar. Stir through the contents of the bowl shortly until everything is evenly distributed.
  2. Add 200 g cold cubed butter into dry ingredients. Rub it into flour with your fingertips until it resembles wet sand. On a warmer day feel free to use a confectionery knife, a regular knife or a kitchen robot. Whatever the method you choose, be quick to rpevent butter from warming up too much.
  3. Add 75 g chocolate chips to the crumbly dough. Distribute it shortly until it's spread evenly throughout the dough. 
  4. Transfer crumbly dough into a baking tin lined with baking paper, 18 x 28 cm. Do it carefully, a handful at a time, and distribute it in such a way that chocolate is scattered evenly. This way you'll ensure that each cookie will have some. Even out the top with a silicone spatula and press down with a flat-bottom spoon until even, compact dough is formed.
  5. Cut lines in the dough with a small sharp knife to plan out your cookies. I'm cutting it in half lengthwise and then dividing each half into smaller rectables, 3 cm wide, which results in 18 cookies. Put the baking in into a fridge as you heat up the oven.
  6. Bake cookies in an oven preheated to 180 deg C, no fan, for 20-25 minutes, until the top becomes beautiful and golden. If the dough browns too quickly, feel free to cover it with a piece of baking paper.
  7. Take ready cookies out of the oven, put the baking tin on a work surface and immediately cut the cookies using the lines you've made before, while the cookies are hot and soft. Set the baking tin aside to cool, until cookies firm up.
